You\u2019re a beer drinker. What do you do? Don\u2019t worry, I didn\u2019t know if using beer in cooking was the best idea either. But then, as an experiment, I tried it.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">One of the main things I love about beer is that there\u2019s always an element of mad science involved in each brew. Each of its four ingredients can be manipulated a million ways to create the perfect brew for any situation. But once you give that a go a few times, you\u2019ve basically mastered it, and will likely want to dive a little deeper. Also, our brewers have worked too hard to have a half-can of their beer shoved up the exit end of a chicken carcass (it\u2019s tastier than it sounds, trust me). And this, my friends, is where the fun begins.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">A few cookbooks exist on the topic with some interesting recipes and with some general guidelines. Luckily, more and more books are appearing on the shelves as chefs experiment and discover different flavours. My suggestion would be <em>The Canadian Craft Beer Cook Book<\/em>. It has some great recipes that will give you a good start, as well as some interesting profiles on Canadian Craft Beer Icons \u2014 including the BC brewpub that started it all \u2014 <a href=\"https:\/\/bcaletrail.ca\/breweries\/spinnakers-brewpub\/\" target=\"_blank\" rel=\"noopener noreferrer\">Spinnakers<\/a> in Victoria. <\/span><\/p>\n<blockquote><p><span style=\"font-weight: 400;\">And since you now have me talking about my favourite brewpub, let\u2019s talk about Spinnakers. There aren\u2019t many places that you can find one of the best views in the city, fresh delicious beer, and a locally sourced menu all under one roof. Unless you&#8217;re talking about Spinnakers. <\/span><span style=\"font-weight: 400;\">With beer involved in almost everything on the menu, you\u2019ll want to make sure you stop by the next time you\u2019re in Victoria. But I digress.<\/span><\/p><\/blockquote>\n<p><span style=\"font-weight: 400;\">Perhaps you\u2019re more of a cavalier in the kitchen like myself. If so, you can take the four rules of thumb from above and have at it. Or, if you\u2019re even more like me, you can throw out all the rules and let the beer flow into everything you cook. I like to play around with my food (sorry mom). Good! to get you started, I\u2019m going to share one of my personally developed, beer-infused recipes that could be one of the few reasons my wife is still with me: my &#8220;Famous&#8221; Shandy Ribs. I\u2019ve made this enough times that I\u2019m willing to put it out there with confidence. If you want the full experience, try out my homemade Beer-BQ Sauce and Rib Rub too!<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Be warned, If you like exact and precise, you can follow this recipe to the word, but feel free to add or take away from it depending on your own tastes. I\u2019m a culinary cavalier remember??<\/span><\/p>\n<p>&nbsp;<\/p>\n<h3 style=\"text-align: center;\">&#8211; <em>Beer Appetite<\/em>. Shandy Ribs<\/b><\/h2>\n<h3><span style=\"font-weight: 400;\">Ingredients<\/span><\/h3>\n<ul>\n<li><span style=\"font-weight: 400;\">Ribs (as many racks as you want)<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Barbecue sauce (try mine below)<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Rib Rub (try mine below)<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Lighter beer &#8211; lager or pilsner (suggestion: <a href=\"https:\/\/bcaletrail.ca\/breweries\/driftwood-brewery\/\" target=\"_blank\" rel=\"noopener noreferrer\">Driftwood<\/a> Arcus Pilsner)<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Fruit juice &#8211; I prefer pineapple<\/span><\/li>\n<\/ul>\n<h3><span style=\"font-weight: 400;\">Directions<\/span><\/h3>\n<ol>\n<li><span style=\"font-weight: 400;\"> Set Oven to 275 Degrees (F)<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Remove silver skin from the underside of the ribs and dry off meat with a paper towel<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Smear barbecue sauce all over the ribs<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Sprinkle rib rub all over the ribs (no need to rub it in)<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Place ribs on cookie sheet meat side up<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Pour half a tin of beer in the cookie sheet<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Pour about the same amount of juice in the sheet<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Tent tin foil over ribs, making sure to limit any air holes over top, your goal here is to create a steam tent for the ribs<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Carefully place ribs in the oven (don\u2019t spill the liquid) and cook ribs for 3 hours<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Take ribs out of the oven and remove tinfoil tent<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Turn oven up to 350 degrees (F)<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Smear some barbecue sauce on top of the ribs<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Place the ribs uncovered in the oven or, if you have one, on the barbecue for about 20 minutes or until the sauce starts to caramelize<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Eat ribs with fury!<\/span><\/li>\n<\/ol>\n<h2><b>Mikey\u2019s Beer-BQ Sauce<\/b><\/h2>\n<h3><span style=\"font-weight: 400;\">Ingredients\u00a0<\/span><\/h3>\n<h4><span style=\"font-weight: 400;\">Group A:<\/span><\/h4>\n<ul>\n<li><span style=\"font-weight: 400;\">1 onion &#8211; any size, chopped well<\/span><\/li>\n<li><span style=\"font-weight: 400;\">4 garlic cloves &#8211; squished<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u00bc cup canola oil<\/span><\/li>\n<\/ul>\n<h4><span style=\"font-weight: 400;\">Group B:<\/span><\/h4>\n<ul>\n<li><span style=\"font-weight: 400;\">5 tsp chili powder<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 tsp salt<\/span><\/li>\n<li><span style=\"font-weight: 400;\">2 tsp ground black pepper<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 pinch cayenne pepper (more if you like spicy)<\/span><\/li>\n<\/ul>\n<h4><span style=\"font-weight: 400;\">Group C:<\/span><\/h4>\n<ul>\n<li><span style=\"font-weight: 400;\">2 cups ketchup (homemade if you\u2019ve got it)<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 cup packed brown sugar<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u00bc cup apple cider vinegar<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u215b cup Balsamic vinegar<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u2153 cup yellow mustard<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u00bc cup Worcestershire sauce<\/span><\/li>\n<li><span style=\"font-weight: 400;\">2 tsp liquid smoke (more if you like smoky)<\/span><\/li>\n<li><span style=\"font-weight: 400;\">3 tsp dark chocolate chips<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 cup strong coffee from this morning<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 can dark beer &#8211;
